This week's TWD recipe was for "Devilish Shortcakes," a chocolate variety of the traditional shortcake. Early bakers reported that they weren't very flavorful on their own, so I decided to jazz mine up with some (woefully out of season and somewhat disappointing) raspberries, whipped cream, and a bittersweet chocolate ganache.

When topped with the berries, soft whipped cream, and warm chocolate sauce, they were pretty incredible. I loved that they were tender on the inside and a little crunchy on top--it reminded me of eating the top layer of a chocolate cake, and everyone knows cake top is the best part! They were mixed and baked in about 25 minutes, which is faster than any chocolate cake I've ever made.
What did everyone else think? Were you all desserted out, or up for a chocolatey diversion?

ReplyDeleteSounds like my kind of Thanksgiving! Would you believe my husband and my brother don't like pumpkin pie? And my mother in law makes this disgustingly spicy pumpkin cream pie. Sick. I was in need of dessert on Thanksgiving!

ReplyDeleteThose look so delicious with the raspberries and whipped cream. I went the brunch route, using whipped cream cheese and cherry butter. Still good.

ReplyDeleteNow, are you talking about cake top that is cut off to even out the cake before frosting it or just the top of a cake, any cake? My chef friend told me in kitchen's she has worked in any scrap of desserts is called "cookie butts", "cake butts", whatever it may be, but that they enjoy those butts and they are always for the chefs.
Oh, and I think you win with your desserts for T-day and the number of people. We had a huge crowd of 60 here and I was freaking about our 25-30 pies/desserts.
